The Indian cuisine is unique, there are so many local alterations that contribute to the actual name of a dish. Read ‘Shahi Paneer’ on the menu, and you’re already in a royal-mughal-darbaar-e-dawat setting. This is a mix-media graphic, almost entirely hand illustrated, with a little help from the Shahi-Darbaar guards.
